Cast iron or stainless will work. I like all clad but there are many others. If you use cast iron you have to use high quality pots and pans because if you use cheap ones they will crack.

Yes, it's got a hum when it's cycling water. But it's not really constant, it hums and then stops when it gets to temp

Hi Renee, It is loud but when I turned it on it was on high first. On high it is loud but on low it's not

Renee I just had my SMEG undermount rangehood and yes it is loud even on low setting. Does a fabulous job but a little loud and mine is set in an enclosed campy. I have the exact same oven and am doing the first time use burn off as I sit and type this reply to you. But yes, the rangehood is a little loud. I hope this helps. I'm from Melbourne, Australia.

Sorry we don't know how to remove the glass

There are three layers of glass. The outermost is integrated in the door itself and cannot be removed unless you remove the door altogether (which I haven't been able to figure out how to do yet). The other two glass screens are relatively easily and quickly removed. The innermost is just plugged in place with pins, no screws or devices needed. The middle one is held by removable rubber blocks neatly formed into the door casing.
