I was taught a similar technique. Since then I changed to kneading in a Kenwood Chef. I figured out by trial and error that 30 minutes in the mixer creates a dough with a very good elastic texture. Any longer and it goes tough. Life’s too short to knead by hand.

This is great method, but filming in from behind or overhead would have made it easier to follow along. Instead I find myself needed to reorient myself based in the fact that I do not have the same perspective when actually performing the tie as I do when watching you do it.
@@deliciousmagazine I did give it a try. I turned my laptop screen upside down and then propped the laptop against the back of the raised bar area of my counter. If you are so inclined, give it a quick try and you'll see how much easier the instructions are to follow when having a first-person perspective. With that, I was able to tie the loin as demonstrated. I do appreciate that there is more engagement when the viewer can see the presenter's face, so having both front on and first-person perspectives is ideals. Yeah... more equipment, setup, and editing, though.

My dough just became smooth and extremely stickier even than when i started. So much so, that it was impossible to lift off the counter to slap agin down

Thanks, I like the video and it helps... but you have contaminated your ball of string with meaty hands and the meaty board as it rolls around. Can you cut the string first and please keep your string ball clean and uncontaminated. How much string to cut? This would be better to show. Thanks
