Ive worked in restaurants for 20 years. Managed them for 15. Just switched to electrical work. However, I can assure u that the accumulated grease on the flatop side, will come off easy like this. But the hoods on the fryer side, are 100 times harder to clean. The grease literally turns to a heavy gelatinous layer. No way to get it off other than manually scraping. That is, if they dont clean their hoods once a month. Sometimes twice depending on the region.
Couldn’t you just have a nossel spray in a persistent cone shape, And it wouldn’t miss any edges or leave anything behind, It would push all The gunk and water out at the same rate and evenly, And not leave some of the gunk behind
