Sir please do a separate video on the Texas sausage and peppers! I think I can make better mashed potatoes, but I like yours too. Once you drain your potatoes, put them back on the heat and cook out as much moisture as possible. Use a potato ricer. Use butter and half and half (or cream, but no milk) and less of it. Fresh ground pepper is a must. It needs a lot of salt. Potatoes should have a mix in, add over or both. Mix ins: herbs, grated nutmeg (at the least). Roasted garlic. Cheese. Sour cream or crème fraiche. Add over: a pan sauce made with meat drippings. Brown gravy. Country/Cream gravy aka chicken fried steak gravy..

You can definitely use self-rising flour in a butter swim biscuit recipe. It actually simplifies the process because self-rising flour already includes baking powder and a bit of salt. When using self-rising flour, you just need to omit any additional baking powder and salt that the recipe might call for. Thanks 🤩
