Hi! This recipe of royal icing is shelf stable so it should last as long as the cupcakes last at room temp. Royal icing will dry hard though - just wanted you to be aware! I wasn't sure if that was what you were looking for in a cupcake. If you try it out, let me know how it is. I've never had a cupcake with royal icing before!

How can it be the softest and the most chewy at the same time? I wish I knew which one it was before I spend time and money making them. I need soft but not chewy. Also I pray for your recovery from the throat cancer. Amen.

Hi! Since it's been a year ago I don't remember the exact one I used, but I'm pretty sure I googled "happy face with star eyes template". You'll get lots of results that way and can use whichever one you like best!
I just tried this recipe and it is more of a stiff consistency but I realized you used the puddle attachment and not the whisk does that make a difference?
Hi Alyssa! The consistency is dependent on how long you mix it. The longer you mix it, the stiffer it will be. I usually mix mine to a piping consistency icing. But if you prefer it to be a little thinner you can just mix it for a minute or two less. And the reason I use a paddle attachment is because a whisk will incorporate more air than the paddle does. You can definitely use that if you prefer. Let me know if you have any other questions!

I might do half TBS vanilla, and half TBS almond. It just depends on how strong you like the almond to be. I find it pretty strong so I may even do 1 TBS vanilla and 1 tsp almond to start, and then you can go up from there if it's not strong enough. I would personally add vanilla no matter how much almond you add because vanilla is always good IMO. 😂 Good luck!
