Grinding your own meat will give you a way better texture, pork shoulder works best and chuck roast too. Use a coarse grind. They look good... Ingredients are endless.

Yes yes yes!! Full video please. 🙏. I’ve done this in the past and they came out just ok. Would love to try again. I had a hard time keeping my KJ at low enough temps. Thinking now maybe I would just use a pellet tube to smoke it? Those looked good and juicy btw. Jalapeno or habenero and cheddar link sounds delicious.
I’m definitely planning on doing some videos. I’m going to do a few more reps to get as much learning as I can and then will share my learnings and mistakes. I got jalapeño cheddar on my list to make. I was able to do this all on the kj. First smoke was between 150-200 for 2 hours, ice bath and then regular cooking temp at 300 for 30-45 minutes before eating. Seemed to work really well.
Charcoal is way better, no comparison. Gas is way more convenient. I say have both, gas for during the workweek and Charcoal for days off. Then when you have company over you can have both going. Use the Charcoal for the low and slow and the gas for the hot dogs and beer brats.
These are type of bbq tools that you will buy and they will take up space in your bbq storage/cabinet and never be used again 😂. I’m sure they will sale though to people new to the bbq world and think they need to have them. Videos like this help them out! 👍

I started taking mine off for the texture reason but, I haven’t tried membrane on in a long time. Maybe I will do that next ti e and see if I still notice a difference. Thanks Scott!
I like these types of videos. I see a new series! Debunking/testing out bbq methods. I personally don’t think half of them matter. It’s all preference and how you feel that day. Fat side up or fat side down (pork shoulder). Foil or butcher paper, score or not to score the meats. Even a binder before you season. I never use binder and my rubs stick fine. Just a good rub and a decent cook for great results. Over the years so many things come and go. This could be a series! 👍
I have always removed the membrane simply because I was told to. Scoring might be an option though. Sometimes the membrane is difficult for me to remove.
There are very good wireless thermometers. This is a whole grade of all of them. This is by far Best of Best. There Support is above and beyond. The results are FANTASTIC
