This looks quite good, but I’m wondering why you didn’t put in the figs & ginger as an “Add-in” rather than allowing them to drop to the bottom. I can’t wait to try the Bailey’s ice cream. Your son is adorable!

Hi Tony. That’s a really good thought. The recipe said to mix in before freezing but I’m going to give it a go as a mix in. Milo says thank you too 😀

What is the US equivalent of double cream? Would it be heavy cream ?
