I've been a working Chef since 17. Earning my culinary degree meant taking courses that were gray areas, especially cake decorating. Baking wasn't my thing so I was dove in head first. I turned my new hobby into a RU-vid channel & blog to document what I was learning in school and help others. Getting good takes lots of practice, and even more frosting. I'm here for all the cakery!

@marishascouturecakes hi! Are you cottage law? If so, does your state allow you to sell the dessert parfaits at room temperature? I know my state in Michigan they dont. Its frustrating. Do you only keep the ones out for display only and give the customer the ones in the cooler?
I do follow cottage food laws. Aside from what I do on the channel I'm a Certified Dietary Manager, Certified Food Protection Professional and I manage kitchens. I've also been a Chef for 14 years so food safety is my top priority. Food safety guidelines are typically the same state to state. Perishable items such as cream fillings, etc. shouldn't be below 40 degrees for longer than 2 hours. If I do have cream fillings I make sure to keep them cold. I'm asking because I'm also, a chef and I recently started making desserts to sell at local markets, and I'm curious as to what the guidelines are for other states, because in Michigan they are strict, and make it harder for us to make certain desserts with dairy. I appreciate her sharing how it works in her state.
@Marishascakes thanks for responding! I recently started selling desserts at local public events, so I subscribed, looking for people doing the same thing. I'm in Michigan. I hate that they are so strict here. We aren't allowed to sell desserts with dairy, whipped cream/ cream cheese, etc. At least not under cottage law. But we can under a higher license, made in a commercial kitchen only, and desserts for have to be chilled at 40 degrees or lower. I appreciate your response as I always ask others how their cottage laws differ from Michigan. It's good information for me.

I took mine out of the oven and yes it has hints...and I mean small hints of purple. Next I am going to try to use Ube extract and maybe ube jam. Now that I have committed myself I have to try again. I also am going to reduce the cocoa powder down to 1 tsp instead of 1 Tablespoon and sift it into the flour.
Hello! Would you recommend a vanilla buttercream frosting for such a cake or a cream cheese frosting? I am working on a red velvet version, but unsure if cream cheese would be stable
