Yes, we need 70 minutes. This way the meat is so tender and absorb all the spices and flavors. After you cook the first 35 minutes, you can see the meat is still hard. I cook this recipe all the time, and it gives me best results all the time. Thank you!
You can use white wine vinegar, rice wine vinegar, apple sider vinegar (Use only 2 tbsp) or grape juice (1/2 cup). Make sure grape juice is not too sweet. These substitutions works well. Wine always add a unique flavor to the dish but it is an optional. You can make this recipe without wine.
Cajun gumbo recipes do not have tomatoes. Creole gumbo recipes do have tomatoes and usually a shellfish/seafood gumbo. So, tomatoes are included in different styles of gumbo.
I also have used darker roux before. However, I prefer brown roux than dark roux, coz I believe brown roux gives the perfect look and taste for gumbo. Anyway, thank you very much for your idea!
When I make stock, I only use the aromatics the potato skins make the finished stock cloudy, and I also strain it a second time through cheesecloth. I add about a half cup of white wine to the shrimp shell after cooking them before I add the vegetables.
Italians don't put chicken in spaghetti. We reserve chicken for very specific dishes. We also do not make Alfredo with cream cheese or cream. True Alfredo is parmesan cheese and pasta water. This is an American dish, NOT italian.
Well of course we can. But most of the time it gets soggy if you dip the whole tortilla. I like my tacos to be perfect and crispy. So I get perfect tacos and can keep it for sometime longer.
