I noted on another site to cook those clams for 2-3 minutes after they are opened up, to kill hepatitis A. There are 2 other common virus' in shellfish, and of course the flesh eating virus of which 1 in 4 cases ends in death (gather them with gloves on, wear gloves until they are cooking.) I was thinking that the wine may make it more safe, as alcohol kills the germs.

I'd love to have a hotpot with mushrooms, but we leave them out as daughter is allergic to mushrooms. Still, there are plenty of veggies, I've not tried before and these look nice.
