Hey everyone! This is Austin and Jessica and we'd like to welcome you to our channel, a place where you'll find us living the life we dream of living and hope to inspire everyone to do the same. We reside in the small beach town of New Smyrna. We're stoked to have you! We live by one motto, "Have fun and that's final". We would also like to introduce the other half of our family, first and foremost, our Pyrenees mix Chief! Chief is a three legged, cancer fighting, badass of of dog. He is in the midst of fighting osteosarcoma and doing it like a champ! The other pet goes by Tomlin, Mr. Bubbles, Tom, honestly whatever our friends decide to call him that day. He's a black cat rescued from PetSmart about 4 years ago and loves to hunt anything that moves. Also, he's the sweetest. Follow along for fun and adventure. Thank you for trying our dish. It was a great attempt! I especially loved the seasonings you used! Pelau is something that can be complex to cook if you're not used to it- even in our own country there are people who don't do it so well. 🤣Especially when we're just learning- it takes some practice. That being said: 1, Pelau is dark in color. So the burning of the sugar process is crucial because you don't want it too dark either. Maybe practice stewing chicken first or look at some videos where people are making that so that you can see what the sugar is supposed to look like before adding your meats. 2. If you can't locate dried pigeon peas, you can substitute using black beans. It's not common in Trinidad but because of its similar texture and dark color, it's a great substitute. Pro tip (If you're using canned- add at the last 5 -10 minutes of the cooking process so it's not too mushy. If you're using dried then pre-cook and add 10 minutes after the rice). The idea is that it remains the right texture. 3. Allow the liquid to evaporate a bit more

With the vegemite on toast.... have looooootttts of butter and then add a little vegemite. It is really strong like that and not very pleasant. It will sting your mouth like that hahahahah. (Aussie who loves vegemite). It is a yeast extract. DO NOT spread it like peanut butter!

Good effort but you needed to bring the sugar some more and cook the chicken alone for about 25 minutes then add the rice, peas veggies and coconut milk the dish would not have been as mushy. Check out Trini Cooking With Natasha pg

@@MellowCo Just saw a comment that you live in Florida.. If you can find a Caribbean supermarket, then they’ll have everything you need. I think there are a few in Orlando, Ocala and other areas. It’s worth finding and then you’ll have everything you need to make Trinidadian and other dishes.
