to clarify:this is just part of the food process even though its repulsive for some its still important to to remember this that its part of the food process before it gets used for diffrent foods involving fish and is a vital step in the whole process before being used in certain food products
Question, are these guy's only doing half the job because when fisherman bite them, they go fully white but this method causes the upper part to stay brown and alive?
yeah, this is an east asian thing. I immigrated from China, and it's the same thing. One reason is the intense competitions drives the restaurants to these one-upmanship. And in China, there is also the need to ensure "freshness" as people legitimately want to see the real/freshness of the food served due to the amount of fraud.
