It doesn't. That's what he's going to say. It doesn't flow upwards it flows northwards unlike other rivers. He made it sound like the river was defying Gravity by going literally up against gravity, instead of downhill - like the only way that I personally know of physics allowing water to flow.
Let me educate you. The true fact is that south is actually at the top while north is at the bottom, in other words our modern maps are upside down. The maps we are using today are drawn by European sailors and of their superiority complex put the north at the top. If you look at ancient maps south is always at the top.

We can test gravity and see its effects but we don't know what exactly it is. There are theories and explanation - i.e. mass curves spacetime and we feel that as gravity and or mass emits/has gravitons that we experience as gravity.

If you were to put some water on a spinning flat plate the water would sling off to the edges (no, this isn't a flat earth speech). Even more, is that you could put water into a spinning bowl and the water will easily climb the sides of the bowl as the rpm increased. Thus, the water in the bowl is subject to both gravity and also the centrifugal action put upon it. If the earth weren't spinning there effectively wouldn't be an ocean within about 2,000 miles of the equator. Point being is that depending on what river and where, it could possibly speed up, slow down or even start flowing backwards if the earth sped up or slowed down. Water flow is a function of the forces exerted unto the water. Water 'flowing downhill' is simply a convenience of speech rather than exacting fact about physical reality. As an aside, there is a place in the Indian Ocean that is 300 foot below sea level (liquid location, not land).
