July 17 2023 Maryland USA: Justin has a very promissing career. He is so calm in every situation. So very humbling. The set up is amazing in France. The one Chef with the pastry and at the meeting when he said one hour seems he could be very tempermental. Loving this video even though it was four years ago.
The chocolate show piece from France was just impossible to beat -- 1:25:36 I felt bad for the team whose show piece ended mostly on the floor -- 1:24:45

Not that familiar with the Coupe du Monde de la Pâtisserie, World Pastry Cup. Mostly heard of. The Australian team of 2012. First time seeing these guys. Seen their team leader, face feels familiar, but only in passing from other Pastry Chef videos. Already knew of: 🇪🇸👨🏻🍳Julien Alvarez, from other Pastry Chef videos and Instagram. 🇫🇷👨🏻🍳Philippe Rigollot, MOF. From Kings of Pastry (Documentary 2010), other videos and Instagram. Saw him graduating from the MOF in the doc. 🇫🇷👨🏻🍳Christophe Michalak, only in a photo with Philippe, from many other Pastry Chef videos, like tv competition Qui Sera Le Prochain Grand Pâtissier, and Instagram. ru-vid.com%C3%A2tissier 🇦🇺👨🏻🍳Anil Rohira, seen in other videos. Not as well known but obviously well respected in Australian Pastry.
It’s pretty hard to see any females in these teams, because guys generally have more stamina and strength for the physical demands of the more high stress pastry work. In France it is still very male dominated. Usually the female pastry chefs stay at team member level, a few make it to Head Pastry Chef. Some prefer teaching or been Head PC. Or just to open their own Pâtisserie. Not many join competitions. Or they don’t make the cut, like this documentary showed. Sometimes the male team dynamic doesn’t fit with the female’s personality.
They shud try new ideas despite old ideas of Singapore...... And did not listen to French 28 years teacher at all....and become work on thier ideas as they won in Singapore...
I am not sure if anyone is still monitoring this channel or not but that was truly amazing. A student and a teacher to qualify to even go to France shows a level of dedication which is unbelievable and to add on another to do ice carving who never had done ice carving before to compete in France for the World. I am floored and I have been baking for 40 years. Not only win a place to compete in World but place 7th I am in awe.
