Biggest plot hole in Coco is why did Coco not put Hector’s photo in the ofrenda and return music to the family after Imelda died? She would have been the matriarch in charge and she could have returned her beloved father back to remembrance and changed the rules.

Honestly they’re not mistakes- I think instead that their world is a world of memories. They are either the age that they are in their photo, or the age that someone alive remembers them as. In Héctor’s case, coco remembers him as a young man. Miguel only knows Imelda from her photo.
I wouldn’t call this a mistake, I would call it an inconsistency. Plus it was clearly done on purpose so the audience wouldn’t catch onto the twist, or suspect something’s wrong. It’s an intentional inconsistency left in there for the plot’s convenience. It’s kind of silly but I don’t mind it
1. It still doesn’t excuse Hector in Imelda’s mind on why he abandoned them. It could be that he’s having fun with another woman when he died young, so for Imelda, he’s still a jerk even though he seemed to die shortly after he left them. 2. My nan started to show grey hair and worn out skin when she hit 80, so Imelda’s looks are still in line with the fact that she died in her 70s.
I mean, both of my Latina aunt's have zero full-on grey hairs - only having a few strands and some tiny ones hidden by the rest of their hair- but they are respectively in their 50's and 60's. My mom is younger yet almost has fully grey hair. This is really just that people don't actually age the exact same and some people could be in their 70's yet not have fully grey hair. Also, for the first point, she probably assumed he got himself killed a bit after leaving initially or even have heard of the fact he "he died choking on a chorizo" and thought that it was true, like you pointed out in the video; she still wouldn't have known that he wanted to come back but that isn't something that matters to her because she mad at him for leaving in the first place, not the fact that he "stayed" instead of coming back.
