Just some comments & opinions from a local newspaper contributor for all of Quintana Roo, living near Tulum, Hartwood is in Tulum, not New York. After visiting Hartwood, one is left with with all of the negative aspects of a big city eatery. Long lines, hostess with a horrible attitude, prices higher than many Michelin starred restaurants (Tribeca area comes to mind) and the list goes on. To have left the states and immersed yourself in Mexican/Mayan culture, after 10 years you sure didn't learn very much. The American mentality shines through in everything you guys do. Even though you (Eric) use the local products from the regional milpas, you still have a lot to learn about the local culture. The locals feel towards Hartwood just like the old PACE brand salsa commercials....New York City ??? Git a rope!!

Catherine Cleary is so well spoken and articulate here. Having said that I should think that Irish craft foodmakers particularly cheesemakers should be able to provide portions of their produce for the home market regardless of the size of the population and demand. I don't think I have ever food producers in the UK or elsewhere making what is an inferiority excuse for their own people.
I feel what Francis is speaking of here is the meditative immersion of cooking. Anyone who has had deep experiences in meditation or prayer will say nearly the same thing, “It’s an experience you can’t explain”. It’s such a present moment experience that cannot be translated into any other language-it’s such a multi-sensory experience of touch, sound, smell and sight. Cooking is undoubtedly his zen. He speaks of cooking as the Dalai Lama would speak of walking the peaceful temple grounds in the crisp morning air.
