Wow, essentially every food contains a significant amount of oil in it. Wonder what kind of oil they use - probably some cheap, unhealthy one, especially if it's cooked with the same oil the entire time. Made me rethink going to such stalls next time 😔
I am not a chef but i cook daily at home. I can tell his food is good as he got the sequence, timing right. He looked quite young but is very good in what he is doing.
And it is amazing he is wearing the mask properly in his hot kitchen. I noticed he worn a glove to handle raw chicken too. It is a good practice. Both of the 2 point i often see hawker not doing.
The chef must take supplements so that his hands and feet will remain strong due to much labour intensive cooking and standing over the fire for a long period of time.
Have probably tried the top 10 Char Kway Teow past 20 years . This is by far the most popular choice as the best . down side - very long wait due to slow frying in most part ....plate by plate
Not trying to discredit this stall, but best nasi lemak in Singapore is Crave nasi lemak, available in all major shopping mall....since u doing Changi village u should try the wanton mee and water shrimp noodles same row as this shop all the way down 1st of 2nd section
