That usually means you have wet wood. The wood should be pushed or placed in the center of the oven immediately and moved to the side once it is up to temperature. This allows the oven to heat up evenly.

I understand Clive had his oven custom built but what I meant to ask what model of your ovens would be the closest to the size and style of his excluding the exterior of his oven.
Bread baking and wood-fired oven baking of food is my hobby. I've watched all episodes produced by Clive and every one is like poetry. I myself have a Forno Bravo which I've learned to use over the past several years. This week my heart sank when I heard that the Liberal Party Govern of Canada of Justin Trudeau has announced the WAR ON PIZZERIAS and wood fired pizza ovens as... they are supposedly a huge threat to our Earth's survival. If these idiotic policies go further none of us is going to be free to cook what we want and the WAY we want.
This is proof that if you can come up with an interesting idea -- someone has already done it on RU-vid. Wow. My wife likes to say adding lemon and cheese together can 'curdle' and upset your stomach. Is this true? Because if it isn't my two favorite things are Chicken Piccata and pizza.
Great video. I used my oven today to cook our New Year dinner. I use the oven at least twice a week. Pizza on Friday night and lunch on Sunday. The Blanc Creative pan that Clive mentioned in the video on cook ware is my favorite pan to use. The steak and Brioche recipe went very well. I do all my potatoes using the method Clive demonstrated. Having cooked our New years day meal in the oven I put the door on and on Jan 2 there was enough retained heat to cook a loaf of bread. When I first started with my oven I created a time temperature graph so I have some idea of the oven's cooling profile. Pizza Friday, bread Saturday morning and maybe a Boston butt on Sunday. All on one firing. I did accidently smoke a turkey one time. Started the turkey but found the oven had cooled too much so I lit a small fire. As it heated up I thought that I had damped the fire down so I put the door on. About 30 minutes later I checked the progress only to be met with a cloud of smoke. Turkey was good but it had an Oak smoke flavour. Thank you for the inspiration.

Was very excited to see this interview but was enormously disappointed. interviewer spoke for 80% of the time (saying not very much) and hardly asked any questions. so much left unsaid.

Clive, your videos are an art form, they have inspired me into building my own oven. From something as base as cooking with flame into producing food of such beauty is inspirational to all. Thanks for doing this ribeye video in a pizza oven! I am thinking about either getting a pizza oven or an offset smoker. I learn how to cut round stuff in two the easy way. Never thought about doing this trick.
