Yummy!! I tried it plain w maple syrup. I did half a batch but not sure if it was my flour brand (golden elephant) that caused it to be too watery or i didnt knead enough. I included 2tbsp of glutinous flour instead of 1 and it seemed to work.
easiest mochi recipe i’ve made so far! it doesn’t leave a mess either if you use oil instead of flour/corn-starch for the dough rolling. i was able to make 6 pieces of mochi out of 6 half scoops of ice cream. i recommend you plastic wrap each mochi right after you finish it before you place it back in the freezer, that way it’ll keep its shape!
