Doing toasted cheese with olive oil over using butter is so much better, I do not understand why more people don't, it is nice seeing you make them using the oil method.
I made this with regular pasta as that's what I had at home and let me tell you the whole thing tasted awesome! Whole family loved it! Can't believe how tasty it was. Such a quick and simple recipe. Cost me under £5.
Roast a 6 oz block of feta cheese along with veggies, all in one pan, 400 degrees for about 45 minutes. Then when it's cooled completely, blend everything with about 16 oz of vegetable broth, until smooth but still thick. Don't heat it. I loved it at room temp. Served with quesadilla grilled cheese. Perfect.
