I am an Indian, Par boiling potato cubes beforehand will help to cook evenly and gets crispy outside and soft inside potato while sauting and mixing with other ingredients... One of my favorite breakfast option.. I love having egg omelet also with this.. ❤❤❤❤
Well gee wizz where is the mazzarella cheese and the garlic at???? I top that every two weeks in my skillet meals!!! I can cook a hell of a lot better than her, ALL DAY LONG! Don't believe me try her recipe than try mine! Everyone on my block standing in line for my iltallian version of that cook off!!!!

@CookingWithRexy I've been cooking alot longer than you have, before you criticize, try. You don't have an open mind at all, if you don't like mozzarella, try chedder. If you dont like flavor, eat cat food, I don't care.....I can cook alot better than you, and I know it by your comment.

I want to use my iron skillet but i dont like the black that come on my paper towel when i season it. Any comments would help cause i want yo use my skillet.
Looks delicious!, my version is almost exactly like yours, I use bacon ( cooked down for the grease) instead of olive oil as it adds another level of flavor. Also some sliced onions, thank you for sharing this with everyone...!!!!
I mix all this together with different colored peppers, my own seasoning and olive oil and put them in the oven. I only have to stir them about three times. They come out beautifully brown without all those different steps! I don't use all that salt either because it causes high blood pressure and hardening of the arteries!
I’ve never left a comment on anything before but just wanted to say it works perfectly I did half the amount shown and cut down the microwave time by half as well definitely recommend people have a go at making this

This was always one of my favorite meals growing up. There were seven of us and my Mom would make a skillet full of this with one addition. She would take 8 or so eggs and beat them as if to scramble them and pour it over the top after everything was browned and my oh my, it was gone in seconds. The skillet would be so heavy I remember her carrying it over to the table using both hands. I sure miss my Mom and I sure do miss my childhood. I was very lucky. Thank you for posting this. I am going to make it this weekend.
