Looks good, but you don't need sugar. Tomatoes have natural sweetness especially if you're using real Italian passata with Italian tomatoes, and you are, you're using Mutti.

I try to made these quinoa tortilla twice on cast iron pan but it sticks on pan. And then burn. Can we not make these tortilla on cast iron pan without oil? Please share oil free quinoa tortilla recipe on cast iron pan. Because I cant use oil and nonstick pan due to medical issues. Doctor told me to avoid oil in food and nonstick pan. Use cast iron. Please reply

Here's what I did after Hurricane Ian when we had no electricity for almost a month and I don't have room to store boxes of shelf stable almond milk. I used a protein powder shaker, the one with the steel ball. For this method use almond butter that has no other ingredients, no salt no sugar or anything like that and also try to use creamy almond butter. First you need to stir the almond butter real good because it separates since it has no oils or anything like that added. I like mine a little bit stronger so I used 1 tbsp of almond butter + 3/4 to 1 cup water, put that in the protein shaker and shook the hell out of it for about several minutes. I also added a pinch of Himalayan pink salt, 1/4 tsp vanilla extract, a few stevia drops and 1/8 tsp xanthan gum. If you find it too gritty, shake just the water and almond butter first and then strain it through a fine mesh strainer, pour it back into the shaker and add any additional ingredients and shake a little more.
Thank you for this recipe! I don't like the soaked texture of chia seeds, so I was looking for alternative recipe without them, but one that still provides the same level of thickness. 🥰
Made these today and will be making them often. They were really delicious and also easy to make. I got 7 wraps out of the recipe. I didn't want to wait 2 hours, so I heated water in my teakettle and then soaked the quinoa in that for 20 min, then followed the recipe as written. Really easy and yummy, and will be great for my diabetic, gluten sensitive spouse.
