For the longest time I thought it was my fault because I had a bit too much to drink and the guy who abused me was someone I knew and had a crush on, until he did what he did of course. I’m 49 and know it’s not okay for anyone to take advantage of someone, especially if they are tipsy. I was also a virgin, not to be too graphic. I was saving myself… now I suffer greatly from uterine, bladder and pelvic issues/pain. Anyway, your demos have helped me become a better baker and because Italian method is my preferred macaron style. When troubleshooting problems people usually give tips on French method. As Adam stated " no one cares how they look" You can really free up the process by allowing cracks And other types of things to occur these give a more variety in The taste and texture
As a regular macaron maker I see that this could be ok BUT If you ever cooled anything greasy like butter based cookies or really anything but macarons don't do this. You need very clean whites for metmringue and unless you cleaned the rack with vinegar this will definitely cause & cost you a whole batch for one reason or another. Just a heads up, everyone!

Macaroons can be very easy to make if you are ok with cracks Macaroons don't really have to be perfect. I've watched the video on Adam Russagas channel about macaroons and it changed my whole perspective
