Well, as a Szechuan born Chinese who grew up with authentic Ma Po Toufu& so many Ma La dishes, I am sorry I have to say... This Japanese guy with a Chinese family name Chen who hardly speaks fluent Chinese, not even to mention Szechuan dialect, is certainly not what you really looking for real authentic Szechuan cuisine.
Yes, we know he isn't Chen Kenmin. However, Kentaro himself has stated that his food is indeed a fusion of both Szechuan and Japanese techniques, and made no such claim that his food had 100% Chinese influence. To dismiss one's dish due to it not falling in line with traditional standards is an insult to the evolution of cooking.
