If its a hard scaled fish like perch bass crappie etc, all you have to do is wrap the fish in wet but not soaking paper towels then double bag it in ziplock bags and lay it flat in the freezer. So small scaled fish like salmon and trout, id talk to a taxidermist as everyone has their preference and the paper towel texture may leave an impression on the skin.

What is the tool that you used to separate the skin from the meat called?

Its just called a fish skinning knife, then the one he used to take the meat off once the big chunk came out is a fish fleshing tool.
