Please redo this video and use the broiler chicken. Those bony legs are not appetizing at all! Also, along with the Coconut, roast the Onion, Garlic and even Ginger if you can. Roast. Not burn. That's what gives the Saoji cuisine their Umami flavor. Burnt coconut, burnt onion, burnt garlic, burnt spices. Burnt spices in Indian context means deeply roasted, till it turns blackish in color. Know the difference.
Awsm recipe mam...will surely try but would request you to add Salt before chicken cook. Last madhe takle tar chicken che pieces alani lagtil aat madhe.
Everything was right except the brining part. Mutton need not even be washed when cooking Junglee mass. Just add it to the ghee and keep on roasting. I understand the need to tenderise the meat in order to reduce the cooking time but brining takes away the authentic taste of the meat which is essential for this recipe. Otherwise you did a pretty good job.
