Quarter them and freeze on a sheet pan, whfrozen pit in a baggie. When you take them out to use the skins peel right off!

You can make a delicious salsa with the skins in a blender with a jalapeno you might need a couple romas to go in but it's worth it.

I deep fry the skins and toss them in sea salt and nori powder as crispy vegan "katsuobushi flake"

That way you don’t get a “false seal” on the product you’ve canned. It’s so unbelievably helpful in KNOWING it’s really kept/still has a seal.
