If Hwoarang is teamed up with Jin during his Arcade Mode playthrough during the time when Ogre hasn't been unlocked yet, the result is that he will be assigned Baek as his default sub boss on stage 7.
10:16 Hwoarang has these stage 7 results: He is instead assigned Jin as his default sub boss as the clone of Hwoarang is assigned Baek as his default sub boss.
7:29 Battle intro: Heihachi VS Jin. To trigger this version of the intro you must select Heihachi as the first character in his Arcade Mode playthrough during the time when Kazuya hasn't been unlocked yet.
If you team up Heihachi with Jin in his Arcade Mode playthrough during the time when Kazuya hasn't been unlocked yet... he will instead fight Jun as his default sub boss on stage 7.
If you play as Heihachi in Arcade Mode when none of the unlockable characters aren't unlocked yet... the result is that Heihachi will instead fight Jin as his default sub boss.

Another method of getting Bryan to fight Lei as his default sub boss is to select him as the second character in his teamup with Kunimitsu. As both characters have Yoshimitsu assigned to them as their regular sub boss.
7:35 We at last reach stage 7 the sub boss stage. Here we see that the clone Bryan is assigned Lei as his default sub boss. Because if he's teamed up with Yoshimitsu, then the result is that his default sub boss is Lei.
