Sadly, I grew up enjoying eating spam - A LOT...and spam musubi was a go-to snack or quick lunch bite. however, being vegan for over a year now, I haven't really thought about how to make a spam musubi replacement - figured I could use extra firm tofu--but it was the marinade that makes a big diff. Mahalo for this recipe - will definitely try since I do have a spam musubi maker but haven't used it in ages. Now I can again!
Mahalo - I gotta make some and bring it to my folks when I visit them in Hawaii and being that my family is half-Filipino we all love adobo - except, I'm the only vegan in my family. so this recipe is GREAT!
