Mary Ann has worked beside world-renowned chefs like Julia Childs and Jacques Pepin.
Picked up one of her cookbooks today at the second hand store. I looked up her show catalog, 30 seasons! I found this gem filed in season 3. How wonderful!

Ricotta is made from whey not cheese and acid. A rennet based ricotta is sweet and amazing. Using acid in milk yealds something similar but just not the same
