I think this recipe and the way you put it all together is awesome! My stomach is making hunger rumbles as I type. Have you tried this with any other mushrooms? (thinking large Portobello) since I have never seen a Lion's Mane in nearby grocery stores. Do you know if the LM mushroom has a distinct flavor that 'makes' this dish?
Thank you! I haven't tried this particular recipe with portobellos (yet). Lion's mane has a meaty texture that's easy to pull a part unlike portobellos. As far as flavor, there's no distinct flavor so it takes on whatever flavor you add to it very well. If you have access to a Farmer's market, I would check there to see if your local mushroom farmer has them. Otherwise, Whole Foods, Wegmans, Mom's, and some Asian grocery stores (i.e. H Mart, 99 Ranch, etc) have them.
Meatloaf is honestly the only 'carnivore' meal I miss since I've been a Vegetarian. I used to like adding Italian sausage . . . so I'll add some 'Beyond' spicy Ital Sausage when I try this recipe. Thanks for this vid. You inspired me!

Soy milk, almond milk, cashew milk, Pea protein (i.e. Ripple) are all great options for this recipe. Just remember to get the unsweetened unflavored option

Oooo!! You gave me an idea!!! I bake cakes (specifically mini Bundt cakes) for a vegan restaurant in my area and I'm always featuring new flavors. Ive served a vegan vanilla pound cake which was well received. I like how you layered the cake and peach cobbler filling and it's always a plus when you can make several different flavors from one general recipe. Imma use your peach cobbler filling with my vegan vanilla pound cake and I may do the streusel topping you mentioned. I really would like to have a way to incorporate pie crust into the cake. Maybe simple vanilla glaze with pie crust crumbs/crumbles?
