I believe I have played with Dimensional Doors early on and it only featured blank pocket dimensions (or, at least, I only used those). I built my house in one and thought the idea of this hidden house was really cool. I probably accidentally recreated Discworld Death's house in a way, but that's cool, too.
Minecraft is so fking customizable to textures of the world to skins to mods that I dont get the outrage of "modren minecraft", other than making the false promises. If you dont like it you can literally just go back and play older versions. But i do wish that their was more whacky mobs like that item stealer concept, but hey thats what mods are for.
criticized for being too scared to change minecraft fundamentally to then go over how they changed minecraft fundamentally by adding new blocks and changing the textures.

As someone who's roommate is into minecraft and never really have been myself? This is both something that managed to make sense to me, easily enough parsed, entertaining to watch and even actually really does have me interested in taking a peep at some of these (Dimensional Doors unironically DOES sound like my kinda jam)
dimensional doors was the first mod I ever got working back when things like curseforge wasn't a thing. I specifically remembering needing to delete a file in my game folder for it to work but I cant find any information about it these days.
The Aether actually grew out of a cut-content idea for minecraft, where you would end up in a sleep dimension if you slept enough times and got lucky, after which you would have been able to access it from your bed at any time. The idea was scrapped, but part of the code for it already existed iirc (citation needed), which is what eventually grew into the Aether mod.
I for one have definitely not forgotten about dimensional doors. Absolutely loved that mod. I've made a bunch of modpacks for my friends and me to play and there was always a good chance that mod was included. It was one of the only mods that was truly scary, yet alluring at the same time. Exploring the dimensions intelligently was super rewarding and getting stuck in limbo was horrifying. I'd love for someone to bring that mod back to life and add upon it's base.
DD has always been a favorite mod of mine. As well as all the bits you mentioned, it works as a dimension hopper. I made a pack years ago with DD, and disabled all the portals, so winding your way through a door's maze was the only way between dimensions, and it can lead you to them all... randomly... This makes it very useful with a mod like AOA that has the most obnoxious portal in Minecraft to try and build.
If you take on the subject of forgotten mods, i STRONGLY suggest you try Reika kanseki mods. they are in 1.7.10 and she still updates them, but they are, without a shadow of doubt some of the best, most creative and unique mods EVER made. you will need a full survival trhing to truly understand them
Deep, deep within the dimensional doors there is a secret room inside a nether fortress made by one of the devs, SenseiKiwi. Haven’t seen anyone else find it. I’m sure there’s tons of other secret hard to find rooms and structures in there too
Both aether and tropico mods were the type of stuff I wish they would have just added to base mc. But here we are like 10y later and minecraft has barely any new content
