I get my blue agave at costco. I do 36oz (1 bottle) per gallon. Depending on how I feel, I'll either drop the one bottle or replace with cane sugar on the 5th part in my 5 gallon bucket.
I use a big still for my main wash and an air still (with adjustable temperature control) for cutting. -go full blast and keep everything from the big still -set temperature for 97C on air still and keep everything -toss back in and set to 83C then throw away -set to 84C (I use for infusions)(not quite right with the better part of hearts) -set to 87C -add equal parts water should get you close to 40-45%
