Ahh I see, that explains it! I shall try it with dark soy. Your video is the first one online which I’ve found with exact instructions on how to properly cook these eggs. Can one omit the Thai sweet and spicy chilli sauce since there's already sambal (sambal is also spicy ) ? Just afraid that it may be too spicy . If some sweetness is needed, can one add in some brown sugar instead of the Thai sweet & spicy chilli sauce ?
You could, but this Sambal chicken is actually *not overly spicy.* The hot and sweet sauce givesa better balance than if raw/ brown sugar is used. Do let me know if you try this wiith brown sugar
Garam Masala? Red Chilli? Fennel? Did you learn to make this cutlet from a North Indian? 😂 The way we learnt to make this from my Grandma in Kerala: only whole Peppercorns, Turmeric and Salt while pressure cooking the beef. While mixing the beef floss with mashed potatoes add pepper powder and green chillies. Pepper really is the star of the show here. Instead of frying, i put them in the oven. That also works though frying is preferable. We bread the cutlets in advance and keep them in the freezer.last easily for a week or two!
The toasted whole spices are not toasted too long only 4 minutes with stirring. And the remaining are mostly powdered ingredients and those that tend to get scorched easily. So they are added later.

In fact the name is derived from ‘curry’ . However, don’t go in thinking its curry because it is not ! 😅Those who like the flavour and texture of peanut butter and savory sweet combinations will enjoy this !
