this video is only relevant if the knife it razor sharp or else you need the force of the up and down chop. a flick of a wrist will never cut an onion unless its a recently sharpened knife
I tried for 6 years getting into sushi, after finishing culinary school no one would hire me. covid hit, I studied, read and cook fish. then I got luck at Hana Japanese Sushi in Louisville, Co. I'm so thankful for his teachings and skills in cutting, plating, and sauce making. I don't call myself a sushi chef, but he tells his customer that I'm a sushi chef that I am very thankful for his hiring and teachings.
Thank you Chef Joe for showing how to skillfully and swiftly cut an onion into fine strips. However, I've had 7 carpel tunnel surgeries for overuse of both wrists while making jewelry, so I will use forearm method. Thanks!
