Rotating it is definitely the hardest part. The part of the pizza closest to the opening is still very soft, making it hard to grab w the peel. Very sad to find out that they now have a rotating model. Would have been great to have that option when I bought it for Christmas! I wish they had an accessory that would make this easier. Even just a high-heat lazy susan would be nice
@@OfficialBertelloPizzaOvenI see, got it! Thanks for clarifying, so basically this requires electricity to work along with gas, plus wood for cooking the pizza. Before it was just a wood-fired gas pizza oven, now it requires electricity as well.
It can also operate on batteries. It's the same concept as a Traeger grill, which needs to be plugged into an electrical outlet, and can be used in the rain.
Very Nice. My original oven from QVC is still in great shape after more than 2 years. So, unless you offer a trade in I will keep the excellent Bertello I have.
That's the prototype for the bluetooth digital thermometer with display. It will be mounted below the opening of the oven, then there's an app for your phone that connects to it.
It is so difficult to see the pizza cooking because the opening is so short and you have to bend over to look in. I found that putting the oven 48 inches up makes it so much easier to cook.
I owned a "Grande" for about 4 months and ended up returning it. I had hoped to use it mainly with gas for the convenience. In my experience "gas only" invariably led to a pizza stone that got blazing hot towards the rear half and never really hot enough in the front. This made the first turn challenging because the part in the back was just about burned while the front was still uncooked and difficult to slide a peel under. There also seemed never enough heat from above to cook the toppings before the bottom was burned. Customer service was very responsive, offered advice (which at least in my hands didn't help) and ultimately sent a return slip.
Good luck in buying the 16" Grande. I already have an Ooni Fyra 12" oven which is fine but have been wanting a 16" combo wood & gas oven. The Ooni Karu 16 gives the choice of using fire or wood but NOT at the same time. On top of that, Ooni wants to charge extra for the propane option. This is absurd considering the already high price. That being the case, Bertello was my first choice because of the simultaneous use of wood and propane feature plus the burner is included in the reasonable price. Only problem is the Bertello Grande is not in stock and as per Bertello, should be back in production "sometime" in 2024's first quarter. Not exactly a firm commitment. There are many Bertello 12 inchers available which makes me suspicious that they may want to move out the 12 inchers thus dragging production of the 16 until they do so. We'll see what happens as I've gone to the Bertello website asking to be notified when the 16 will be available again, but so far, nothing.
The whole point of buying a pizza oven is to make free form pizzas. I highly recommend Jim Lahey’s pizza dough recipe that you make the day before. It is delicious and easy peasy
I wonder if the oven opening is large enough to accommodate anything other than a flat pizza such as a 10x14 Detroit pizza pan. From the video the smaller sides of the front of the opening look kind of narrow. Difficult to tell. What are the dimensions of the opening at the ends and the center?
i'm late to the party here, but you should probably stay away from using oak due to the generally high tannins in the wood. hickory would be a much better choice in this regard.
A lot of people are complaining that the feature of heat coming from the bottom to heat the pizza stone gets too hot and burns the bottom crust too much. Are you going to make any changes to avoid this in the next model?

Got my BertellO a couple weeks ago. every weekend ... pizza party. amazing oven, totally recommend!! and the owners are awesome... normal guys... sent me stuff as well. wood and gas combo, can't beat it. love making my own dough as well... getting good at it! who knows, might go into business. ;)
