What this shows me is that there is no right way. Some people add the spices. at the beginning. You add the spices halfway through. I'm assuming that so the spices do not cook out. At the end of the day it's a matter of experimentation. It's not like baking a cake. You can do more or less what you want when you're making a curry
Use cut green papaya instead of Aloo ,meat will be more tender and green papaya taste better than Aloo. Green papaya is zero calorie but Aloo calories is more than rice. So green papaya is more suitable for diabetic patients !
I'm guessing that you would then cool it down and refrigerate it for service later in the restaurant? Do you just microwave each portion as it is required or do you fry it to get it hot?

If you can go to a Asian(Pakistani/Bangladeshi) Super Market in your area where they sell beef (halal). You will see they are selling a variety of meat cutting.
