I often do 1/2 cup white sugar and 1/2 cup brown sugar when baking this cake. If the brown sugar is not very brown in colour (like the kind you get in Trinidad) you can do all brown sugar - I have done this before and it’s fine. The cake will just have a slightly different color, but will still taste nice.
Hi! You can use less sugar if you want, but the 1/4 cup is not that much for 4 cups of flour. The hops will not turn out sweet at all- the amount of sugar will just contribute to the overall flavor of the dough. Hope it turns out well. Happy baking🙂

Hi you don’t need to use dates- you can use any mix of dried fruit that you have available. You can use more raisins and cranberries and omit the dates. You can also use currents/dried apricots/ candied cherries as well. If you are using less of the fruit mixture you will need to add some more liquid like orange juice or milk to the cake batter to ensure it stays moist. So if you want to use just 1/2 cup of the soaked fruit mixture, add 1/2 cup orange juice or milk to the batter. Hope this helps and let me know if you have any other questions 🙂
