I’m pretty sure the cucumbers have to remain covered in the brine or they will mold. If you had something heavy you could place on top the cucumbers that would hold them under the brine that would be best.

Wow! I’ve never thought about frying cucumbers I’ve done green tomatoes and squash. I’m definitely going to try this because our cucumbers are ready to pick. Thank you I love cornmeal it looks delicious!
This came up in my yard for the first time this year in a bed I built for my dinosaur kale. Living up in WA zone 8b, it hasn't started taking over, but I'm leery of letting it, as I'd much prefer eating kale over fuzzy leaves. If it's worth keeping, maybe I'll transplant it into a pot.
