Honey child, where is your seasoning? I like the concept of converting pumpkin soup into a pasta dish. This is a very ambitious dish, and you make it look so simple. I would season the meat with salt, pepper, oregano, parsley, and tumeric. I would season the pumpkin sauce with cinnamon, nutmeg, allspice, and mace. A very tiny bit of mace will bring out the sweetness, and make the meat heartier. Some cooking wine for acidity or lime juice for zest to taste. I would do a penne noodle or orzo. Orzo in this would stay true to the soup inspiration and make it savory. Rigatoni or Penne adds surface area to better taste the flavors. I like the concept but i would just like to see you season each stage of cooking. This adds depths of flavor. I like the idea... i think orzo instead of rigatoni, and even just some pumpkin spice seasoning would make it pop. Keep working hard! You're doing an amazing job!! I need to show this to my lady. This looks really good on a cold day. I would even create a french onion soup variant, with the meat, cheese, but baking it with a slice of homemade bread or artisan bread with a layer of cheese on top, omg.
