What a keeper, as we say in English! An amazing young man. I wonder if he’s following in his father’s footsteps or he hopes his children will follow him. I wonder if he makes good money from this as I can see how the ingredients he is using must be expensive. And so many are thrown away after making stock with them. I’m very impressed.

I'm surprised they crack the eggs against a lip, this risks contamination and shell in the egg (which we see a few times). Eggs should be cracked on flat surface
