It's an old french technique called en vessie. The bag is the pigs bladder, you put whatever you want to steam inside it, tie it up and poach it. The bladder inflates from the steam and traps in the moisture and fragrances of whatever aromatics you have inside. It's pretty much old school sous vide cooking. Similar to en papillote, just poached instead of baked.

Met her once. I was a little nervous and didn't have much to say, but she ended the awkward silence, and we had a brief but comfortable conversation. I ended up getting a pic with her. Jesse Jane (RIP) was there and wanted in on the pic, but I said, "Just Sasha, please." I feel kind of bad about that now. The funny thing is I watched a movie called "Middle Men" starring Luke Wilson soon after that night. There's a cameo scene of Jesse Jane that depicts her doing the same exact thing to some guy at an award show. Strange coincidence, I guess.
use a higher heat oil and get a really good brown crust on the meat, and THEN flip them and add butter! it'll prevent your butter from browning too fast while getting the maillard reaction to occur
