Thank you so much for the instructions. The are so hard, and kind of scary with different knife. The last time I cut the potatoes, I used a chef knife. But, your info fixed all my anxiety and made cutting a sweet potato doable and kept me from cutting my hand off.
I feel like there’s a lot of waste? However, I’ve often wondered how you would get perfect squares that are consistent with something that is round. And I guess there’s really no other way. Really really great job.

You don't know how to grip a knife properly, nor do you know how to position your left hand so that the knuckles are guiding the blade, thereby preventing cuts. So, how do you come to post a recipe on knife skills?

Looks great until you said the chicken is done after 2 hours on low?? That won't be done at all. Not even remotely! It's low for 6 hours and high 3-4 hours
You should never hold your knife this way, with your finger on the top of the steel. Whole hand grip on the back of the blade and rock down. This is a serious injury waiting to happen
