A lot of the time especially in the oven when the internal temp of the chicken is truly right at done the exterior usually doesn't look what people expect to be done but that's the juiciest most tender way is to take it off at 165 inside. Kitchen thermometers are cheap 😁. It is in fact not the best way to eat that skin I like that crunchy but I believe the chicken was finished for sure. I wouldn't use frozen chicken for it
