I've gotta say, looking at this product again a year later, I am supremely intrigued. Not only for emulsifying, but for rapidly cooling ice baths nearly instantly. I can see endless applications that my ultrasonic cleaner bath simply cannot approach with its order of magnitude less acoustic power. Sometimes more really is better.

Why does it need to be those specific frequencies? The power level of the probe is more important. These ones operate at several hundreds of Watts. Much more than your typical ultrasonic cleaner tub.
I don't think so, during the homogenizing, the liquid temperture will goes up, and might melt the ice cream. however, if it's for short while working, should NOT be a problem.
