This definitely seems like one of those things that looks really impressive but doesn’t actually taste very good. Honestly I think it would be a lot better if you just filled it with regular store-bought jello, which is what I thought you were going to do. Watermelon is a weird fruit, it tastes amazing fresh but its juice tastes gross, especially the longer it sits around for. It has this really nasty aftertaste. Watermelon is a fruit that in general, the less manipulation the better. Beyond cutting it up nothing needs to be done to it.
That looks like a maasssiive bamboo. There must be a variety specifically for its palm heart? In the Deep South we sometimes hear of Swamp Cabbage, delicious.
It also matters what kind of soy sauce for example there is Koikuchi (dark soy sauce), Usukuchi (light soy sauce), Tamari (a thicker, richer sauce) this one is my fav and perferred, Shiro Shoyu (white or very light), and Saishikomi (sweet soy sauce)
