This was such an odd way of describing this. It’s called ‘Mise en place’ (MEEZ ahn plahs) is a French term for having all your ingredients measured, cut, peeled, sliced, grated, etc. before you start cooking.

ok, i’ll agree with your knife hand. but your food hand is all wrong. curl your fingers in so your knuckles are pointing towards the blade, even touching the blade is fine. this will naturally have your finger tips back and away from the blade and you should never get cut.
You're absolutely right! I don't curl my fingers under until I get the blade closer because it's not comfortable for me. But that is definitely the better, safer way to cut.
