Yes, you can. Cook time will vary based on pasta type, but our chef suggests using a perforated pan for 2/3 of the instructed time (8-12 min) in the preheated steamer.
We recommend using our locator, www.vulcanequipment.com/service, to find your local Hobart Service or Vulcan certified independent service provider to install the conversion kit for your oven model.
The pressure is limited by the thickness of the food and the gap retained by the gap adjuster setting the operator sets up. You should be able to reproduce a desired level of pressure by testing the outcome of varied gap settings.
A great question! As the MF-1 mobile fryer unit can be used with any deep fryer, 110 lbs of oil or smaller, it is best to set the gas valve of the fryer to either PILOT or OFF. This will ensure that the burners will not come on while the vat is empty. Only some models have built-in safety systems where the only step is to open the drain valve.
Ummm ? Exactly at what point can I clean your brand of oven without oven cleaner or bleach ? It's literally a nightmare and no one buys the drip pan. Not one kitchen ALL WITH YOUR OVENS ! PLEASE EXPLAIN THAT MESS
It would have been nice to see you "turn on" the salamander! Totally get you're throwing in the food to heat it up, but it'd be nice to say "Okay, pushing it up to the second position, that means the food is cooking with "X" amount of heat or "X" degrees.....Got a wall mount? It'd be great to cut away to a wall mount if you're trying to mention that (!) thanks for posting video though! Thanks for sharing Chef!
We love your thoughtful feedback, and Chef Pete will appreciate these details that help him work with the camera-person to capture helpful content. We also have a series of Operator Help videos on our channel that are a good fit to instruct on proper technical use of Vulcan equipment. Salamanders are not produced yet for that series, so please subscribe and allow notifications to follow along. Thanks!

I don’t have an owners manual, I have a Vulcan 60L oven. The pilot will light, but the oven will not light. No gas comes from the main center thing. What should I do?
The IBEX is unique, and we love using the unit in our test kitchen! If you want to see a live demo, fill out the form at ibexoven.com/#contact to coordinate with a local representative.
Thanks for asking for this installed measurement clarification. When mounted, the top of the reinforced shelf on Vulcan Endurance™ ranges (on the standard 6” legs) is roughly the same height as the standard shelf. That totals 58 to 58.375 inches. A Salamander can be mounted on top of the reinforced shelf.
Steam jacketed kettles are excellent for making custards because of the ability to control heat. A large pot on open burner requires attention to prevent boiling. Custards, sauces and cooked salad dressing that require whole eggs or egg yokes must not be boiled after the eggs are added, or it can cause the finished product to curdle.
our system detects that it is in a boil out situation but then the temperature goes down to 165 degrees and it never boils out... I have tried several times and it does that every time
