I would prefer this method over the ridiculous hand holding method in which you position your knife from the waist and reciprocate the blade while peeling the cucumber. Personally, it's too demanding of a precision. not only that, but you run the risk of slicing yourself and possibly others around you. my boss always said keep your knife on the board at all times, but yet he approves of this dangerous method, such the double standard. I'm going to try implementing this technique, because I believe this is much safer, and will get the task done much faster. Thank you for sharing this trick.
