But the one for popping boba requires you to work with Calcium lactate and Sodium alginate. For example, u can passion fruit purée mix in calcium lactate. Prepare a sodium alginate bath by blending in destilled mineral free water sodium alginate. refrigerate it for some hours and if u have any foam on top of the bath u can use a spoon to collect the foam and use a torch for any remeaining foam or bubble formation. use a syringe with a quite wide opening to get bigger pearls. once u dropped them in and let them rest for like 30 seconds (the longer u let them in the firmer they become that means less liquid inside) after that u gotta fish them out and rinse them in a bowl of clean water to stop the spherification process.
